Gingersnaps

This is the gingersnap recipe that my middle school math teacher gave me.  I never was any good with numbers, but I manage well enough for baking.

Ingredients:

  • ¾ cup margarine or butter
  • 2 ¼ cups flour
  • 1 egg
  • 2 teaspoons baking soda
  • 1 cup brown sugar
  • ¼ teaspoons salt
  • ¼ cup molasses
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger

Instructions:

  1. Cream butter and sugar together.  Beat in egg and molasses.  Beat until fluffy.
  2. Add mixture of flour, soda, and spices to creamed mixture, mix well.
  3. Shape into 1-inch balls, roll in sugar-cinnamon mixture (3 teaspoons cinnamon to 2 cups sugar).
  4. Place 2 inches apart on cookie sheet.  Bake at 350 degrees for 10-12 minutes.  Allow to cool.
