Pumpkin Spiced and Iced Cookies

Ingredients:

Cookies

  • 2 1/4 c. all-purpose flour
  • 1 1/2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 c. butter, softened
  • 1 c. granulated sugar
  • 1 can (15 oz.) Libby’s 100% Pure Pumpkin
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 c. (12 oz. package) Nestle Toll House Semi-Sweet Chocolate Morsels
  • 1 cup chopped walnuts

Glaze

  • 1 c. powdered sugar
  • 1 – 1 1/2 T milk
  • 1/2 tsp vanilla extract

Instructions:

Cookies

  1. Preheat oven to 375 F.  Grease baking sheets.
  2. Combine flour, pumpkin pie spice, baking powder, baking soda and salt in medium bowl. Set aside.
  3. In large bowl, beat butter and sugar until creamy.
  4. Beat in pumpkin, eggs and vanilla extract.
  5. Gradually beat in flour mixture.
  6. Stir in morsels and nuts.
  7. Drop by rounded teaspoonfuls onto prepared pans.
  8. Bake for 15-20 minutes or until edges are lightly browned.
  9. Cool on baking sheets for 2 minutes.
  10. Remove to wire racks to cool completely.
  11. Drizzle with glaze.

Glaze

  1. Combine powdered sugar, milk and vanilla in small bowl.  Mix well.
