Chewy Spice Cookies

Try chewy spice cookies for the taste of gingerbread without all the calories. These are topped with a zesty lemon icing.
Ingredients
Cookies:
- 1 c. sugar
- 1 c. molasses
- 1/4 c. applesauce
- 1/4 c. skim milk
- 2 T vegetable oil
- 1 tsp rum flavoring
- 3 1/2 c. all-purpose flour
- 1 1/2 tsp ground ginger
- 1 tsp baking soda
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/8 tsp salt
- vegetable spray
Icing:
- 4 c. sifted confectioner’s sugar
- 4 T plus 1 tsp skim milk
- 2 T lemon juice
- 2 T grated lemon zest
Instructions:
- Preheat oven to 375 F.
- For cookies, beat sugar, molasses, applesauce, milk, oil and rum flavoring in a large bowl, until well blended.
- In a medium bowl, combine flour, ginger, baking soda, cloves, nutmeg, allspice, and salt.
- Add dry ingredients, one-third at a time to sugar mixture.
- Stir until a soft dough forms.
- Spray hands with cooking spray and shape teaspoonfuls of dough into balls, flattening slightly with fingers.
- Place 2-inches apart on a baking sheet, lightly sprayed with cooking spray.
- Bake 6-8 minutes or until bottoms are lightly browned.
- Transfer cookies to a wire rack with waxed paper underneath to cool.
- For icing, combine all ingredients in a medium bowl, and stir until smooth.
- Ice cooled cookies, allowing icing to harden.
- Store in an airtight container.
