Cinnamon Raisin Bread Pudding with Maple Sauce

This recipe came from a Land O’Lakes seasonal cooking magazine.  Cinnamon raisin bread adds flavor to this easy-to-make bread pudding.  Serve it warm with homemade maple sauce.

Ingredients:

Pudding:

  • 1/4 cup butter
  • 8 slices (or 4 cups) cinnamon raisin bread, cut into 1-inch cubes
  • 2 cups milk
  • 1/2 cup sugar
  • 2 eggs, slightly beaten
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon

Sauce:

  • 1/2 cup firmly packed brown sugar
  • 1/4 cup butter
  • 1/4 cup maple syrup
  • 2 tablespoons half and half

Instructions:

  1. Heat oven to 350F.
  2. Place 1/4 cup butter in 1-1/2 quart casserole dish.  Melt butter in the oven (about 5 minutes).
  3. Add bread cubes; toss to coat.
  4. Combine milk, sugar, eggs, vanilla and cinnamon in a medium bowl; stir to blend.
  5. Pour mixture over bread crumbs.
  6. Bake for 40-45 minutes or until center is set.
  7. Meanwhile, combine all sauce ingredients in a 1-quart saucepan.
  8. Cook over medium heat, stirring occasionally, until mixture comes to a boil (about 5 minutes).
  9. Continue cooking another 3-4 minutes until mixture is thickened.
  10. Serve warm sauce over warm bread pudding.
