#NaBloPoMo – Never make that again.

Today’s prompt for #NaBloPoMo was to talk about a dish I’ve attempted to make that ended in disaster. As soon as I saw this, I knew it needed to be about the time I attempted a seafood casserole.

It was the 1st year my husband and I were married, and I was attempting a new recipe for Lent. My husband doesn’t particularly like fish, so the only time we do meatless or seafood is on Fridays during Lent.  Personally, I could do fish and seafood just about any time, but that’s another story entirely.

Since Matt doesn’t really eat seafood, making a seafood recipe was new to me. But I didn’t figure it could be that hard. And I remembered a fabulous seafood casserole I’d eaten once in the dorms at Purdue, so I set about searching the internet to find one- this was pre-pinterest mind you.

I found one that looked simple enough, so I set about getting the ingredients: shrimp, crab, lobster, crackers, mayo and a few other things.  The first thing I discovered when I was making the dish was that I should have cut the recipe down. I used an entire jar of mayonnaise and ended up with a heaping 9″x13″ pan of the stuff. Needless to say, it was much more food than Matt and I needed.

The next problem was the taste. It wasn’t the worst thing I’ve ever had, but it had so much mayo in it that the casserole tasted more like someone had left a batch of creamy seafood salad out in the sun.  It is honestly the only thing I’ve ever made that my husband has told me he would not eat if I made it again.  But that’s been 5 years ago now, so I might brave the pinterest boards to find some better seafood recipes for Lent this year.

So far I’ve found a one pan Moroccan fish that looks promising via Lexi’s Clean Kitchen.

And a recipe for Dungeness Mac & Cheese from La Crema that I would love to try.

    My favourite seafood recipe is a simple one from my friend Manisha Pandit, who grew up in Maharastra, India. She finally posted it for me (and a few others) on her blog Indian Food Rocks a couple of weeks ago. Her recipes work!!

    The most disastrous recipe I remember making in terms of making far too much was when I made Rabbi Serber’s noodle pudding; it was good but made a huge amount! Thank goodness we had college students across the hall in those days, four girls with boyfriends attached who would devour any sweets that were going. Noodle pudding with cornflakes, canned apricots and cinnamon? First they just O.o’d but then they tasted it and snarfed the lot!

    Failure in terms of “oh dear, toss that right now” was the Turkey Mole Poblano from the old Frugal Gourmet’s cookbook. Horrible. Just–ew.

    It’s on the latest post, titled Marching into 2015 With Coconut Oil. The recipe itself is called “Pan-Fried Shrimp in Coconut Oil.”
