Snickerdoodles

Rolled in cinnamon and sugar before baking, snickerdoodles are sweet treats that you can make in quickly and easily with ingredients on hand.

Ingredients:

  • 1 c. butter, softened
  • 1 1/2 c. sugar, divided
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 1/2 c. all-purpose flour
  • 1 1/2 tsp ground cinnamon, divided
  • 1 tsp cream of tarter
  • 1 tsp baking soda
  • 1/4 tsp salt

Instructions:

  1. Preheat oven to 375 F.
  2. In a large bowl, cream butter and 1 1/4 c. sugar, until fluffy.
  3. Add eggs and vanilla, beat until smooth.
  4. In a medium bowl, combine flour, 1/2 tsp cinnamon, cream of tartar, baking soda, and salt.
  5. Add dry ingredients to creamed mixture;
  6. Stir until a soft dough forms.
  7. In a small bowl, combine remaining  1/4 cup sugar and 1 tsp cinnamon.
  8. Shape dough into 1-inch balls and roll in sugar mixture.
  9. Place balls 2-inches apart on a lightly greased baking sheet.
  10. Bake 6-8 minutes, or until bottoms are lightly browned.
  11. Transfer cookies to a wire rack to cool.
  12. Store in an airtight container.
*Yield about 7 dozen cookies.
