Miniature Melt-a-Ways

This is one of those great recipes that starts with a cake mix, cutting the prep time in half.  Dipping the miniature cakes can be a bit messy, but it’s well worth it.

Ingredients

  • 1 box yellow cake mix
  • 3 eggs
  • 1/3 cup oil
  • 1 1/4 cup water or unsweetened juice
  • 1 (16 oz..) pkg confectioners sugar
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lemon juice

Directions

Preheat oven to 350. Spray miniature muffin tins with cooking spray or grease them well with shortening. In larger mixing bowl combine the cake mix, eggs, oil and water. Beat until smooth. Spoon into muffin tins, filling them about 2/3 full. Bake for 10-12 minutes or until a toothpick comes out clean when inserted into the center of one of the tiny cakes.

While cakes are baking, combine the confectioners sugar, orange juice and lemon juice in medium sized bowl and beat until smooth. As soon as the miniature cupcakes come from the oven dump them into the confectioners sugar/juice mixture, coating well. Place on rack to cool. Be sure to have pan or wax paper under rack to catch drips. Makes approximately 6 dozen.
