Orange Cake

This is my step-mom Carolyn’s recipe for orange cake.  I like this one, because it starts with a cake mix, making it ultra simple.  This recipe has it’s own frosting recipe, but it’s also great with cream cheese icing.

Cake Ingredients:

  • 1 box yellow cake mix
  • 2 eggs
  • 3/4 cup oil
  • 1 (11 oz) can mandarin oranges

Cake Instructions:

  1. Add all ingredients to mixing bowl, mix well.
  2. Pour in prepared pan(s) of your choice and bake according to directions on cake box.
  3. Let cool and frost.

Frosting Ingredients:

  • 8 oz cool whip
  • 1 small box instant vanilla pudding

Frosting Instructions:

  1. Put ingredients in medium bowl and mix well.

    Hmmm….interesting, I think i’ll have to try it, and maybe substitute with tangerines from,my new tree when they bloom again!
